ORIGIN OF THE

Friselle

As Italy’s flattest region, Apulia is perfect for growing wheat. This is what gives rise to the so-called friselle. These are round slices of bread made from durum wheat, which are topped with tomatoes from the region. The dish is then garnished with olive oil and seasoned with fine salt. In the past, the dish was known as a meal for the fishermen of the region, but today the simple dish has made its way into the menus of upscale restaurants.

Zaccaria

Mino is a native of Apulia who settled in Vienna for the love of the city. His years of experience in gastronomy now help him in running A’Frisella and serving customers. Awarded Maitre of the Year, he knows how to put together Apulian dishes from fresh and regional ingredients and take you on a culinary journey through southeastern Italy. The contact with his guests is immensely important to Mino and so he likes to join you at the table for a short chat to inquire about your well-being.
